Tuna(less) Salad Sandwiches

Serves: 4 | Time to prepare: 30 minutes

With hearty garbanzo beans, traditional tuna salad additions and just the right amount of oceany nori seaweed, these full-flavored sandwiches will quell any craving for their nostalgic counterpart while giving you an extra serving of joy knowing that you’re fostering the ocean rather than pilfering from it.


  • 2 cans (30 ounces total) garbanzo beans, drained
  • 1/2 cup vegan mayonnaise
  • 1/3 cup celery, chopped finely
  • 3 tablespoons red onion, peeled and chopped finely
  • 3 tablespoons dill pickle, diced
  • 1 1/2 tablespoons nori seaweed flakes
  • 1 clove garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 slices whole grain or gluten-free bread
  • 8 slices fresh tomato
  • 4 large romaine lettuce leaves


1)On a large plate, mash garbanzo beans using fingers, potato masher or back of a fork.
2)In a medium bowl, stir together vegan mayonnaise, celery, onion, pickle, seaweed, garlic, salt, and pepper. Fold in the mashed garbanzo beans and combine thoroughly.
3)On bread, layer lettuce, 2 slices tomato and a generous scoop of Tuna(less) salad. If you like, spread an extra layer of vegan mayonnaise on the bread. Cut in two, on the diagonal and serve.
