No-Bake Chocolate Cream Berry Pie

Serves: 1 | Time to prepare: 60 minutes

A Quick No-Bake Chocolate Cream Berry Pie for any occasion. A chocolate coconut almond crust, topped with cinnamon cream and then with fresh berries. The pie is best served cold. It uses easily available ingredients, is customizable and tastes delicious. Chocolate and strawberries can never go wrong:). The cream is lightly sweetened and the fresh berries make it a perfect summer snack or dessert.

Ingredients

  • 1/4 cup vegan chocolate chips
  • 2 tablespoons ground almonds (Or coconut flakes for nut-free version)
  • 2 tablespoons coconut flakes
  • 1 teaspoon almond milk
  • chocolate liqueur or rum extract (optional)
  • 2-3 tablespoons non-dairy yogurt (I used So Delicious coconut milk yogurt plain)
  • 2 teaspoons ground raw sugar/jaggery or maple syrup or sweetener of choice
  • sliced strawberries
  • blackberries or blueberries
  • 1 generous pinch of cinnamon

Directions

1)In a pan, add chocolate chips and almond milk.
2)Melt the chocolate in a double boiler or microwave. (Microwave in 30 second bursts, 2 times).
3)Add in liquor extract, or spices of choice and mix well until smooth.
4)Add the ground almonds and coconut flakes to the melted chocolate and mix to distribute.
5)Pour the mixture into a tart/pie pan and spread evenly.
6)Place pan in the freezer for 15 minutes.
7)In a bowl, mix vegan yogurt, sugar/sweetener and cinnamon/spices of choice and whip to air up the yogurt.(1 minute)
8)Slice strawberries.
9)Take the pie pan out and spread the spiced yogurt on top.
10)Top with berries.
11)Freeze for half an hour just to firm up the yogurt. Serve.
