A healthy combination of sweet potatoes and black beans make this quesadilla deliciously different! Although there is some cheese (vegan cheese of course), the creamy smashed potatoes allow you to use less than you normally would. And because these are grilled, you never even have to heat up your kitchen!
|1)||Boil the cubed sweet potato until soft, about 8-10 minutes (the smaller the cubes, the faster they'll cook). Roughly mash them, leaving a few small chunks, measure out approximately 1 cup, then set aside.|
|2)||Using a butter knife or the back of a spoon, schmear the cheese around on top of the 4 tortillas, divided equally.|
|3)||Cover 2 of the tortillas with a mixture of the beans and sweet potatoes, then top with the remaining tortillas, cheese side down.|
|4)||Place the quesadillas on a grill heated to medium-low, making sure to move them around a bit for the first 10-15 seconds so they don't start to stick. Leave still for about 5 minutes, then flip. Grill for another 5 minutes.|
|5)||Remove, cut, and serve with sour cream and salsa if desired. Enjoy!|
