The holidays are a time for eating, drinking and being merry. Friends laugh, yogis sing and the time flies. The folks at alignyo are giving it a healthy spin this year with the help of wellness expert Amanda Skrip.
Try Amanda’s Butternut Squash Bites with Ancho-Honey Glaze, sure to be a favorite at your next party.
Ingredients:
- 4 cup butternut squash, peeled and cut into 1-1/2 inch cubes
- 1 tbsp olive oil
- 1/3 cup honey
- 1 tbsp ancho chili powder
- 1 tbsp dijon mustard
- sea salt
Preheat oven to 400. Line a large baking sheet with parchment paper. In a large bowl, toss squash with olive oil and a pinch of salt. Arrange in an even layer on baking sheet. Bake for 15 minutes. Meanwhile, add honey, chili powder, mustard and a pinch of salt to a small bowl; mix to combine.
Remove squash from oven and generously brush glaze evenly on top. Return to oven and bake for an additional 15-20 minutes, or until squash is fully cooked. Stick a decorative toothpick into each ‘bite’ and serve warm or room temperature.
