Adventures With Quinoa

I make it a point to keep learning and trying new things. This is especially true in the way I eat.

Nearly five years ago I made the decision to become a vegetarian for ethical reasons. I knew that single handedly I couldn’t change the world, but I told myself that I wouldn’t be the reason that an animal should suffer and die just so I could eat.

Cooking meatless meals at home has been a challenge. I don’t know anyone else who is vegetarian. Thankfully my husband is fully supportive. I’ve had to learn to be creative with food and that includes looking for and trying new recipes.

I had yet to try cooking quinoa. While doing my grocery shopping one day I bought a box on a whim without knowing the first thing about cooking it. I looked online for recipes that sounded appealing and simple enough.

I found a recipe that was just what I was looking for: quinoa and black beans. Most of the ingredients were already in my pantry.

One not so busy Sunday I set out to finally try it. It wasn’t as hard as I thought and it turned out to be very tasty.

I’m glad I took the chance on cooking something new. As it turns out, quinoa is full of protein, high in unsaturated fats and low in carbohydrates. There are many ways to cook it and surely all very delicious.
